When I tell y’all I love to bake… I mean I LOVE to bake. With pies being one of my personal favorite desserts to consume, and apple pie being the ultimate pie of all pies, I knew exactly what I wanted to create with these Twin Dragons Egg Roll Wrappers.
Around the holiday’s is typically when you see the humble apple pie filling everyone’s feeds (and bellies). But I’ve come up with the easiest and tastiest way to get your apple pie fix without waiting for the holiday’s to come around or hours in the Kitchen for a whole pie to be baked.
The best part? It requires less than 10 ingredients & takes you less than 20 minutes to make!
1x Package of Twin Dragon Egg Roll Wrappers
1x Apple (I like using honey crisp or Granny Smith)
1-2 TBS Coconut Sugar
1 TBS Coconut Oil
1 tsp Vanilla Extract
2 tsp Ground Cinnamon
1/4 tsp Ground Cardamom
Pinch of Salt (I used Himalayan Pink Salt)
4-5 TBS Avocado Oil (or any high smoke point oil, may need more depending on size of pot)
Cut Apple into small bite size pieces (if you’re familiar with the term “diced” then do that). In a medium sized sauce pan, place cut apples & coconut oil in pan and heat over medium heat for 5-7 minutes or until they start to soften. Once softened a bit, add in coconut sugar, cinnamon, cardamom and salt. Cook stirring occasionally for another 3-5 minutes. Once the liquid starts to thicken, take off the heat and stir in the vanilla extract.
While your apple mixture is set to the side, on a cutting board take 1 sheet of Twin Dragon Egg Roll Wrapper & cut into 4 smaller but equal sized squares (cutting in half lengthwise down the center than that sheet in half once more. Place about 1 tablespoon of apple mixture in the center of the wrapper & wrap egg roll as usual (just much smaller so work slowly and carefully if you’re new to this!). And before closing up the top, use your finger to place a small amount of water at the corner and then wrap over to seal the egg roll shut.
Once all wrapped and sealed, in a small saucepan, place avocado oil just enough to cover the bottom & so that when the egg rolls are placed in the pan, they’re covered about halfway. Heat oil to about 325 F (can set your stove top to medium/high heat) and once hot, place egg rolls in the pan seam side down. Fry on one side for 1-2 minutes then flip. You may need to adjust the heat accordingly & make sure all sides are cooked. Once done cooking, carefully take the egg rolls out of the pan and let some of the excess oil drain off onto a paper towel lined plate.
Serve hot & top with more cinnamon/coconut sugar before serving!
